BOISE -- Currently valued at $1.25 billion, the market for vegetarian meals nationwide is expected to double over the next five years, according to the Idaho Bean Commission.
This increase is especially noticeable in college and university dining halls where beans are providing cost-per-serving economy, versatility and a complementary protein profile.
To capitalize on this growing trend, IBC and the National Association of College and University Food Services are co-sponsoring a competition to promote the consumption of beans on campuses nationwide.
The competition is open to all members of the association and offers a prize valued at $2,500.
Nine NACUFS' regional winners will each receive paid registration to the 2003 conference valued at $500. In addition, each winner's college or university food service operation will be awarded $500. The grand prizewinner will receive NACUFS conference registration, travel and lodging -- a $2,000 value.
The Vegetarian Marketplace Promotion must run for a minimum of two weeks between August 2002 and February 2003. Closing date for entries will be March 15, 2003, and judging will be completed by April 30. The winners will be presented at the NACUFS 2003 conference.

The Idaho Bean Commission was created in 1957 by the Idaho State Legislature. It consists of eight members appointed by the Governor. Each Commissioner is actively engaged in growing, processing, or shipping beans produced in Idaho.
The commission's primary purpose is to promote the unique benefits of Certified Blue Tag Seed grown in Idaho, and beans as a nutritious food source. A tax collected from growers, handlers or dealers funds the commission's financial operations.
