Fried Eggplant


  • 1 large eggplant, sliced
  • 1/4 Cup oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 Cup bread crumbs (or crushed corn flakes or matzo meal)

Slice eggplant. Add one Tablespoon oil to bread crumbs. Dip eggplant slices into crumbs. Fry eggplant in oil, onions and garlic. Variation: Top with cheese, tomato sauce or Italian seasoning.

Serves: 4
