• 1/4 Cup oil
  • 3 tomatoes, cubed
  • 1 large zucchini, diced
  • 1 small eggplant, cubed
  • 1 large green pepper, diced
  • 1 large onion, chopped
  • 2-3 cloves garlic, minced

In large frying pan sauté in oil the tomatoes, zucchini, eggplant, peppers, onions and garlic. Cook over low heat for 10-20 minutes. Serve over rice or bread.
