Tomato-Eggplant Bake


  • 2 Tablespoons oil
  • 1 small eggplant, peeled and cut into small pieces
  • 1 can stewed tomatoes
  • 1 onion, chopped finely
  • 1 green pepper, chopped finely

Place eggplant, tomatoes, onion and green pepper in oiled baking dish. Cover with cheddar cheese if desired. Bake at 350 degrees until done (approximately 20 minutes).
